COMMISSARIES: WHY USE ONE

If you’re thinking about getting into the food truck business, you’ve likely heard the term ‘commissary’ thrown around. A commissary is an important part of your mobile business. 


Compliance with Coastal and Fraser Health codes and laws are the most important part of getting your permit and keeping the health department happy. In some cities like greater Vancouver, food truck operators must work out of a licensed food establishment, like a commercial kitchen at a commissary that provides a clean environment that is also certified for that use. 


This same principal applies to food stalls at farmers markets and festivals.  It is also easier to make and prepare your food in an assembly-line fashion rather than in the confines of your truck. Mountain Commissary can provide that extra elbow room to make sure your food looks as good as it tastes.  

Package Rates

 

Rates

The kitchen is available by the hour, on a first-come, first-serve basis, 24 hours a day, 7 days a week.  We can work with you to schedule a one time use the next day, or regular recurring time slots.  Our standard rate packages are as follows:

Starting Up:

$160 per month*

Includes 8 hours a month.

Additional Hours are $20/hour.

This package is ideal for farmers market vendors who use the kitchen just a few times a month in preparation for the weekend farmers markets.

Growing:

$1200 per month*

Includes 40 hours a month.

Additional hours are $20/hour.

This package is for members requiring 4-5 full work days in the kitchen per month.

Anchored:

custom package and pricing.*

60+ hours a month.

Our Anchored option caterers to members with an established operation looking to turn Mountain Commissary into a long term solution. We work with you closely to create a custom lease package to meet your exact requirements.* Utilities included.  

Prices do not include Sales Tax.

Getting Started

First Step

The first step for most prospective kitchen members is to make an appointment to see our kitchen.  Our staff is minimal, but we do our best to return all inquiries within 24 hours. Once you're ready to get started, we'll help you with the basic requirements to use our kitchen: 

Food Permit

Fraser and Coastal Health requires a Permit issued by either agency. 

Food Safe Level One

Each member is required to have a valid Food Safe Level One certification. 

Insurance

Members are required to provide proof of liability insurance of at least $1M naming Nature's Garden Organic Deli as an additional insured
